Noma, which opened in 2004, is a two Michelin star restaurant run by chef René Redzepi in Copenhagen, Denmark. The restaurant's founders René Redzepi and Claus Meyer have attempted to redefine Nordic cuisine, focusing on reinvention, interpretation and redefining, using techniques such as molecular gastronomy. The cuisine of Noma can be considered an interpretation of Nordic food rather than classical Nordic food, according to Meyer in the book Noma - Nordic Cuisine. More famous dishes include 'radishes in edible soil', and who wouldn't want that?.  As I am sure it is more satisfying than it sounds. Always falling short in rankings to the divine cuisine of El Bulli, Noma officially was ranked as the best restaurant in the world by Restaurant in both 2010 and 2011. Lets Eat!
