Since we really don’t like to celebrate anything without Champagne, it’s a completely integral part of our heavenly punch recipe – an ultra simple and elegant way to serve cocktails to a crowd.
1 cup water
1 cup extra fine sugar
2 750-ml bottles chilled Champagne (Prosecco, Cava or good sparkling from another region all work)
2 cups white rum
2 cups pomegranate juice
2 lemons, very thinly sliced
Fresh mint leaves
Ice (in a single block or small chunks)
Make a simple syrup by bringing water and sugar to boil in small saucepan, stirring until the sugar is completely dissolved. Simmer five minutes. Cool completely.
Combine champagne, rum, and pomegranate juice in punch bowl. Add enough syrup to sweeten to taste. Mix in lemon slices, pomegranate seeds, and mint leaves. Add ice block to bowl or small chunks to single cups. Mmmmmmmmm.
