Resolutions aside, there is nothing like simple salad to make one feel bright eyed and lively – even in the dead of winter. Our slaw is as refreshing and pleasing to the palate, as it is healthy. An effortless light lunch or ultra figure friendly dinner when served with grilled fish or chicken.
½ red cabbage quartered and finely shredded
½ white cabbage quartered and finely shredded
3 raw beets peeled and shredded
2 large carrots peeled and finely shredded
4 green onions trimmed and finely sliced
½ bunch kale shredded
2 cloves garlic peeled and minced
2 tbsp white wine vinegar
2 tbsp lemon juice
6 tbsp extra-virgin olive oil
1 tsp dijon mustard
Handful mixed seeds or nuts such as sliced almonds, sesame or sunflower seeds
Small bunch fresh mint, leaves picked and torn
Place the sliced cabbage, carrot, kale, beets and green onion in a large bowl. Combine the garlic, vinegar, olive oil, lemon juice and mustard into a container with lid and shake well. Add good pinches of sea salt and freshly ground pepper, then drizzle over the salad. Use your hands to toss and evenly coat the vegetables. Lightly toast seeds or nuts in a dry pan, then scatter over the salad. Sprinkle mint leaves, serve and enjoy.
